biryani bol brand strategy
In the highly competitive New York restaurant market, I led the go-to-market strategy for Biryani Bol, a product of Unapologetic Foods, the group behind New York’s only Michelin-starred Indian restaurant. Tasked with transforming a dormant product, I overcame supply chain challenges, built delivery partnerships, & crafted a compelling brand identity—all with minimal prior food industry experience.
Biryani Bol's unique concept, “We Create, You Complete,” allowed customers to finish the traditional ‘dum-cooking’ at home, preserving authenticity while enhancing convenience. I developed the business model, built the website, and designed a marketing strategy that emphasized nostalgia, craftsmanship, & culinary heritage.
Sustainability was central to the brand, with biryani delivered in eco-friendly clay pots and paper bags, reducing plastic waste & offering customers a way to repurpose the pots.
This experience was about more than business development—it was about proving that traditional products can thrive in a modern market.
